Here’s a great recipe to help you keep cool during this hot summer. You can freeze this Frozen Fruit Slush all in one large container/pitcher or in individual containers, taking one out as needed.

Ingredients

Makes about 10-12 individual servings

3 medium firm bananas, sliced

1/2 cup lemonade concentrate

6 medium ripe peaches, peeled and cubed

3 cups water

1 20-ounce can crushed pineapple, undrained

2 cups sugar (or correct amount of synthetic sugar of your choice)

1 to 3 cups seedless red grapes, halved

1 cup orange juice concentrate

Directions

1. In a large bowl, stir the bananas and lemonade concentrate until coated. Stir in the remaining ingredients.

2. Cover and freeze for eight hours or until firm. Place in the freezer in one large container or in separate serving size ones.

3. If using a large container, remove from freezer after one and one-half hours before serving. For an individual-size container, remove about 30-40 minutes before serving. You want the mixture to become slushy, but not completely thawed for most refreshing results.

Q: What is a Meyer lemon and how does it differ from other lemons?

A: This relatively new lemon family member is a cross between a lemon and an orange. It’s named after F.N. Meyer who in 1908 imported it into the U.S. from China, where it has been grown for centuries. Meyer lemons have a rounder shape and smoother skin than regular lemons. Their color ranges from deep yellow to yellow-orange. Their aromatic juice is sweeter and less acidic than that of regular lemons. Meyer lemons are available from November through May in specialty produce markets and some supermarkets. Choose firm fruit that is heavy for its size. Refrigerate in a plastic bag for up to two weeks.

When cooking with vegetables like onions, bell peppers and mushrooms, chop extras if you have them and store them in small plastic bags in the freezer. To keep the bags from floating around and getting lost among all the other food, place them in a plastic box similar to the size of a shoe box. That way you can easily find what you need in a hurry on nights when you’re extra busy.
